PICS & LEEKS

So J&K are finally back from Europe and we went out last night with them to the Busy Bee Cafe, another one of my downtown faves for organic burgers. K showed me a couple hundred out of 800 pictures of the trip and, no, I was not bored. First of all, she got a new camera for the trip and the quality is amazing. Second, the places they went and things they saw and did were just breathtaking: a camel ride in Morocco, a cooking class in Spain, drinking cocktails in an ice bar in France. They did it all and I'm really happy for them. I just wish they had taken ME,  that's all. Anyway, it was great to see them and catch them up on all they missed here in the last three weeks, which was zero. On another note, I made a really yum soup today for my daughter who woke up with a sore throat. Here is the recipe for my version of chicken noodle soup:
1lb. organic chicken, boneless skinless
Trader Joe's bag of frozen & chopped leeks, (or fresh)
2 cartons of Trader Joe's organic chicken broth
3 carrots chopped fine
Trader Joe's flat egg pasta
salt & cracked pepper
Boil the chicken in enough water to cover it. Take chicken out and dice it. Put it back in water and add cartons of broth. Add leeks,carrots, and seasoning. Bring to boil. Crush long noodles in the bag until they are smaller bite-size rectangles. Pour noodles in and boil for last 10 minutes. Done.
